Sunny Days

Shirt - River Island
Jeans - Topshop
Shoes - Converse

The sun is out! Finally! Though, sadly, I doubt this lovely weather will last for long. After my long day at school, I thought it would be nice to take a couple of photos of what I was wearing as a form of procrastinating from doing any revision. I absolutely love this shirt, I managed to snag it in the River Island sale and every time I wear it I get bundles of compliments on it. It's so comfy and very silky, definitely different to anything else in my wardrobe. Right, time to go and revise now...

Triple Chocolate Cookies

These cookies... Perhaps the best, chocolatiest cookies ever? If you eat them about 10 minutes after they have come out of the oven, they're warm, gooey, chocolately bites of perfection. Even my mum had one (and LOVED it), and she herself proclaims she doesn't even like chocolate cookies much - what a weirdo.

Recipe (adapted from here and here):
200g butter
300g caster sugar (I think this can be decreased as the cookies can be quite grainy when cool)
1 egg
275g self raising flour
75g cocoa powder
100g each of white, milk & dark chocolate chips (or 300g of any combination you like)
Pinch of salt
(Splash of milk)

1. Preheat the oven to 200oC.
2. Cream the butter and sugar together until smooth, and then mix in the egg.
3. Sift in the flour, cocoa powder and salt and mix until combined. If the mixture is too hard then add a drop of milk to soften it.
4. Stir in the chocolate chips.
5. Roll into small balls and place on a lined baking sheet. Bake for around 8-10 minutes.
6. Leave them for at least 10 minutes before eating (or they will fall apart into a gooey mess), they are best eaten soon after baking if you like gooey, soft cookies, but if you prefer a harder cookie then you can eat them within a couple of days.

Iceland #2

The second instalment of my photographs of my visit to Iceland last week. These include a volcanic beach, the 'Pompeii of the north' (on the island of Heimaey), a waterfall which, despite looking beautiful from the ground, we had to climb 445 steps to reach the 'summit' of, a volcanic landscape and two glaciers. See if you can guess which photograph is which! Iceland was an amazing place to visit, and if I ever have to chance to return I will go in a heartbeat! Everywhere you turn there is a beautiful landscape to behold, and I would recommend that everyone go, if you are able to!

Iceland #1

On Friday evening I returned from a 5 day geography trip to Iceland with my school. I had never been before, so it was really exciting to go, and I enjoyed the trip so much! On the first day, straight after landing, we visited the Blue Lagoon spa which was absolutely incredible! Anyone looking for a relaxing spa weekend should definitely go there, it was beautiful and amazing. I took so many photographs on the trip, so I've split them into two posts! The sights we saw on the first day were part of the Golden Circle tour, and included the exploding geysers and some incredible waterfalls. The following days we saw some glaciers, and an ice berg lagoon that should have been incredible but instead was covered in a thick layer of snow! On the final day we went whale watching, and we were lucky enough to see some killer whales. Sadly, I didn't get any photos of them! However, more photographs of the trip will be up shortly!

A Short Apology

Exam season is almost here, and so I've not had sufficient time to keep posting on here. Also, I'm going to Iceland until Saturday, and so I promise there will be some posts then! (or around then...)

I'll soon get back to baking things like this:

And doing stupid things like this:

Please stick around! Thank you :)
