Single Serving Chocolate Chip Cookies


Whilst attempting (read: not trying at all) to write my personal statement, I thought it would be nice to take a break and have a little baked treat as a reward for all my hard work. I had travel injections this morning, so I was looking for an easy and quick fix for my cravings, which would require minimal effort. Recently, I've been seeing more and more 'single serving' recipes, which are perfect if, like me, you are always a little wary of internet recipes as they can easily lead to the waste of good quality ingredients (see rant here). So, this recipe for 2 chocolate chip cookies looked perfect!


I used the recipe here from No. 2 Pencil, and it is wonderful! Perfectly gooey in the middle, slightly crispy edges, and just the right amount of chocolate! I had to bake my cookies for 11 minutes rather than the 8 suggested, but they are so quick and simple to make. I'll definitely be making these again soon, along with her Chocolate Chip Cookie in a Cup recipe (I'll use the egg white not needed in this recipe - even less waste!).
